Eggs are one of the only food sources to provide small amounts of important vitamin D. Do not be concerned about eggs causing high cholesterol and ignore the old wives tale that they may have a constipating effect. We simply can’t get enough of them.
Eggs are for some, however, a potential allergen so if this is the case for your child, please take care.
When baking, it’s best to bring eggs to room temperature and out of the fridge (if kept there). Older egg whites are brilliant for making meringues and fresh eggs are better for poaching. Both whites and yolks freeze well. It is the yolk part of the egg that can give one food poisoning not the white.
